Jamie Lee – Head chef
Jamie was trained on the Michelin circuit in London cooking under Jason Atherton for the Gordon Ramsay group as well as many other star establishments. He worked for Paul Cunningham in Tivoli and joined the Fiskebar team in 2012.
Peter Rose – Sous-chef
Peter trained under Mads Refslund at MR in Copenhagen before going on to work in many of the cities kitchens such as Orangeriet and Sankt Petri. Hereafter he joined the team opening Fiskebar.
René Renissen – Restaurant Manager
René worked at Kødbyens Fiskebar from 2009-2012. He had a trip outside the meatpacking district where he explored a big party of the Kadeau universe, but now he is back as our general floor manager.
Frej Helstrand – Head Sommelier
Educated from Noma and Kødbyens Fiskebar and as sommelier at The Wine Academy in CPH. Gradually Frej has worked his way from cocktails to wine at Kødbyens Fiskebar, and now he is challenging our wine menu in biodynamic directions.
Kristian Linde – Managing Director
Our man behind the scenes. Kristian is the driving force during daytime and a big part of taking Fiskebaren into the future.
Jesper Wissing – bar manager
Worked at Fleisch, where he infused liquor with meat, among other things. He doesn’t do this at Kødbyens Fiskebar instead he makes a virtue out of making the best cocktails with the fruit, greens, and herbs the seasons can offer.
Anders Selmer – Owner
Winerd and restauteur for many years in Copenhagen as well as restaurant manager and sommelier at noma for the first 5 years. Creator and former winemaker at Lilleø wine.
